For more than half a century, Balzac Brothers have collaborated with Transcafe not only to enhance their selection of specialty Guatemalan coffees but also to support Transcafe's relationships with smallholder farmers throughout Guatemala. This year, we are delighted to offer Iglesias, which showcases the painstaking processing techniques implemented by Transcafe at their mills to maintain consistent, clean cup quality and flavor profile year after year.
The "Iglesias" moniker is derived from Antigua, a famous ancient city that houses over 43 churches. This exceptional coffee originates from Plantation Santo Tomas and El Vallecito, both situated in Ciudad Vieja in the Sacatepéquez state on the slopes of the Agua volcano. Grown under Gravilea trees in nutrient-rich volcanic soil, Iglesias is comprised of 60 percent Bourbon and 40 percent Caturra and Catuai varietals, cultivated at elevations ranging from 1450-1500 meters above sea level. After harvesting, this shade-grown coffee is transported to Transcafe's Concepcion mill in Escuintla, where it is sundried on patios and meticulously sorted by size, density, and color. The end product is a remarkable coffee with a vast array of complex flavors.
