Colombia El Rubí
Along the hillsides of Huila, Colombia, Heiner Lazo and his wife Johanna own Finca El Rubí. Here they harvest some 7,300 trees of the Pink Bourbon variety grown in soil enriched with organic material, phosphoric rocks, and dolomites. Not sure what dolomite is? Welcome to geology, class. In short, it’s a type of limestone that provides nutrients to the coffee crop and helps balance the pH of the soil to support optimal growth. Pretty important stuff, eh?
Washed and sun-dried processed then small-batch roasted to a level 3, this beautifully balanced Colombian coffee delivers the characteristics we know and love from this region (honey-sweet, balanced body) but has a special floral orange finish that has us swooning (and sippin’).
You do you, but we recommend pairing a fresh cup of Colombia El Rubí with a warm chocolate croissant and a slow morning.
